Shell an wash well the defreezed shrimps, add half of the salt and stir.
Stir-fry the shrimps in heated to 390oF (200oC) oil for 2 minutes, take off the pan and drain the oil.
Stir-fry wild garlic with ginger in 1 tablespoon of vegetable oil for several seconds. Add fried shrimps, the rest salt, sugar, ¼ cup water and bring to a boil. Remove from the heat and cool. Top with greens while serving.
