2/3 lb potato
monosodium glutamate
salt
greens
Directions:
Chop pork racks finely, rinse, pour 5 cups of water and bring to a boil, skimming the froth off. Boil over medium heat for an hour. Add diced potatoes, MSG, salt, and cook for another 20 minutes.

When serving, sprinkle with chopped greens.
