2 lb vegetable marrows 2 onions ground (mixture of (coriander, cinnamon, cardamom, nutmeg, cloves) 1 tomatoes 1 tbsp wheat flour 3/4 cup vegetable oil salt, ground pepper greens | Directions: Rinse and peel squash, and cut into rings, salt, pepper and dredge with sifted flour. Sauté in 2 tablespoons of preheated oil until ready.
Peel onion, cut in rings, and fry in the remaining oil until golden.
When serving, put on a plate, top with onion rings, sprinkle with thinly chopped greens, and arrange wedged tomatoes around. |
