– Peel the pears. Dissolve the sugar in boiling water, boil the pears and cool them without taking out of the syrup.
– Roll out the pastry and cut four pear-like flat cakes. Slightly stab the cakes with a fork, put 1 tbsp cream on each
– Halve and core the remaining pears. Slice and place them fan-like on the cakes over the cream. Bake for 20 minutes over average heat.
– To prepare sauce warm up the sugar until light brown. Add the cream and heat another 2-3 minutes. Cool.
– Serve the pear puffs with the sauce.
