– Sift the flour, mix with the sugar.
– Warm up the water, add butter, bring to the boil. Pour the flour, remove from heat, mix and cool.
– Add the eggs one at a time stirring continuously to form smooth paste.
– Put the pastry rings on a buttered baking tray . Bake for 10 minutes.
– Whip the cream with the sugar powder.
– Cut the rings across, fill the lower part with the cream and fruit, cover with the top, sprinkle with the sugar powder and decorate with the mint leaves.
