1 genoise *(see the recipe)
4 oz (100 g) toasted chopped almonds
6 tbsp sugar syrup
3 tbsp white rum
6 tbsp coffee
1 cup butter cream (see the recipe)
1 cup chocolate glaze (see in the recipe)
Directions:
– Halve across the genoise.

– Mix some syrup with the rum and part of coffee, soak the genoise halves.

– Smear one of the cakes with part of the butter cream mixed with coffee and cover with another cake.

– Coat the cake with the remaining cream.

– Cool the cake for 2 hours before serving, then glaze and decorate with the chocolate mixed with the coffee beans.
