12 egg yolks
2/3 cup sugar
1 lemon or orange zest
2 tbsp orange liqueur
2 tbsp rum
3 tbsp red wine
3/4 lb (360 g) cookies or biscuit
3/4 lb (360 g) meringue *
Directions:
– Wash the eggs well in a soda solution, then rinse them in large quantity of water. Separate the yolks

– Remove the lemon or orange peel using a fine grater

– Pound the yolks with sugar, add the peels, orange liqueur, rum, wine and beat until dense sour cream consistence

- Pour the egg-flip into a cream bowl, serve the biscuit or meringues separately
