Products Needed:
7 tbsp butter 1 onion 2 tbsp wine vinegar 2 tbsp white wine 2 tbsp each tarragon, chervil and coriander greens, chopped salt, ground black peppercorn to taste

Directions: Dice onion finely.
Mix wine with vinegar, add onion and boil down the mix to reduce half its initial volume. Add butter, salt and pepper. Stir the sauce and add spicy herbs.
