2 tbsp lemon juice
1 egg yolk
1 tbsp mustard
salt, ground black peppercorn to taste
Directions:
Mix butter with mustard.

Beat egg yolk, add butter-mustard mix, and add lemon juice bit by bit, beating the mass constantly. Add salt, pepper and stir.
