Peel the pears and cucumbers, shred. Combine with the plumped sultanas and crashed hazelnuts. Drizzle with lemon juice, add sugar and toss.

Garnish with lettuce leaves when serving.

NB Use 2 tablespoon sour cream, mixed with 1 tablespoon apple juice, instead of lemon juice.
