1 tin (short 1/2 lb/400 gm) tomatoeses, tinned in their own juice 1/2 lb (225 gm) green beans 4 tbsp vegetable oil (corn) 1 tbsp wheat flour 1 large onion 1 red sweet pepper, 1 small green sweet pepper 1 1/5 cup vegetable bouillon 1/2 cup rice tabasco sauce ground peppercorn | Directions: Pour half of the vegetable (corn) oil in a small pan with thick bottom and heat over a low heat. Add flour and fry on low heat stirring constantly until brown, avoiding scorching.
In a large pan heat the rest of oil and fry cut onion until soft for about 5 minutes. Add cut sweet pepper and beans, fry for 3 minutes. Add tomatoes, bouillon, 1 tsp Tabasco sauce, fried flour and stew over low heat, covered, for 10 minutes.
Season with salt, ground pepper and serve in serving plates topped on a portion of warm rice. |
