Mix vegetable oil, vinegar, sugar, salt and pepper, beat the mixture.
Dice boiled vegetables. Put red beet in a separate bowl and dress with the prepared sauce, let stay for 10 minutes without mixing with the rest if the vegetables to avoid discoloring.
Dice cucumbers and mushrooms, reserve a portion of mushrooms for topping.
