1 lb. carrots
2 oranges
2 tbsp. shredded pistachios or parched cedar nuts
Sauce:
1 tbsp. olive oil
2 tbsp. lemon juice
a pinch of sugar
black pepper, salt to taste
Directions:
Grate carrots coarse. Peel oranges, remove membranes and cut into segments, reserving oozing juice.

For the sauce, mix oil, juice, salt, pepper and sugar.

Before serving combine carrot with orange slices, cover with sauce and посыпьте nuts.
