3 avocadoes
1 tbsp. lemon juice
Sauce:
1 bunch spring onion
2 chili peppers
1 inch ginger root
6 tbsp. tomato paste
1-2 tbsp. red wine vinegar
2 tbsp. olive oil
ground black pepper, salt
Directions:
For the sauce, cut onion, pepper and ginger finely. Mix with tomato-paste, vinegar, salt, ground pepper and oil, sustain 30-40 minutes.

Halve avocado and discard pits, sprinkle cut side with lemon juice.

Fill avocado with the sauce and put on a plate, garnishing with parsley greens.
