1.1 lb. berries (strawberries, raspberries, blackberries, blueberries, black currants) 3-4 tbsp. orange liqueur 1 tbsp. powdered sugar Sauce: 4 egg yolks 3 oz. sugar 1/2 cup dry white wine grated zest of 1/2 orange and 1/2 lemon 1/2 cup cream | Directions: Sprinkle berries with liquor and let to steep.
For the sauce, whisk egg yolks with sugar, wine and zest at a water bath 3-4 minutes. Remove from the heat and put in water with ice. Keep whisking, stir in cream.
Pour berries over with zabaglione and bake 5-7 minutes in the oven. Serve immediately, sprinkling with powdered sugar. |
