Bring sugar with nut oil to simmer until golden. Turning the form, pour in the caramel to cover the surface evenly. Cool.
Halve apricots, discard pits, plaice tight in the form cut side down. Cover with eggs whipped with cream, milk, salt and vanilla pulp.
Stand it in a bain-marie and bake 30 minutes at 392 °F (200 °С). Cool, put on a plate and garnish with lemon balm.
