Sift flour, make in the center a deepening and mix in whipped with 2 tablespoons of sugar egg yolk and lemon zest. Spread 2 ounces of cooled and shaved butter into it and knead dough.
Roll the dough flat. Put the flat cake in the oiled form 9 1/2-inch in diameter, make a score with a fork, sprinkle with the remaining sugar, spread remaining butter shavings atop and sprinkle with almonds. Bake 12 minutes at 492 °F (200 °С).
Cool the dessert, cut into portion size pieces and serve with fruit and berries, garnishing with mint. If preferred, garnish with vanilla sauce (see the recipe) or with vanilla ice-cream.
