Whisk egg yolks with salt, cumin and mustard, add milk and stir up. Dice the cheese. Cut crusts off the bread, dice ¾ of the bread, add cheese, combine with the milk mix, set aside for a wile to soak and add wine.
Whip egg whites until stiff foam, combine with the cheese and bread mass, put the mass in a greased baking pan, put butter pieces on the surface, sprinkle with crushed remaining bread.
Bake in the oven for 25-30 minutes over 360F. Sprinkle with chopped greens and serve.
