Risotto — A dish from rice cooked by special Italian technique. It’s prepared by stirring hot liquid little by little into the rice. Rosemary — Widely cultivated evergreen and shrubby perennial with small light-blue flowers. The aromatic leaves, whitish beneath, are used for seasoning, and the oil is used in perfume and medicine. Roux — а mixture of equal amounts of fat (butter, oil, bacon grease or lard) and flour cooked together, over low heat. It is used as a basis for thickening sauces. Depending on the cooking time, roux can vary in color. The darker the color of the roux, the deeper the flavor. |
