2/3 lb (300g) mackerel
3 cucumbers
1 red hot ground pepper
1 egg
3-4 tbsp vegetable oil
1 tbsp 3% vinegar
1/2 lemon
1 tuft parsley greens
salt, ground black pepper, to taste
Directions:
Gut and bone the fish, season with the salt and pepper. Combine the fillet by two, interlaying with thin stripes of hot pepper. Smear the fish with the egg and put tight on oiled baking sheet. Pour with some oil and vinegar. Bake in oven at 390oF (200oC) for 10-12 minutes. Chill.

Slice the cucumbers, dress with the remaining oil and vinegar, season with the salt and pepper. Chop half of the greens and sprinkle the cucumbers, toss.

Put the cucumber salad on a serving dish, place the baked and portioned mackerel over. Garnish with lemon and parsley before serving.
