Rinse and soak squids in water for an hour, skin, rinse again, cut into stripes, and boil for 2 minutes.
Rinse and hull celery, chop thinly, and dip into boiling water for a minute.
Sauté chopped onion and ginger, then put squids with celery in, and keep frying for 15 minutes; when about ready, add vinegar, vodka, soy sauce, salt and pepper.
Serve with greens.
