4 red sweet peppers
2 oz (50 g) hard cheese
2 tomatoeses
1 cucumber
1 onion
16 pitted black olives
2 tbsp capers
4 tbsp vegetable oil
1 tsp 3% vinegar
salt
parsley greens
Directions:
Bake the peppers, peel, seed and then chop fine. Rinse and dice the tomatoes and cucumber. Chop fine the onion and mash slightly with the salt. Cut the olives into rings.

Combine the prepared ingredients and add in the capers. Mix the vinegar and oil, season with the salt and dress the salad.

When serving sprinkle the salad with the grated cheese and garnish with greens.
